About this material

Maca grows at roughly 3,800 to 4,500 metres in the puna grasslands around Peru's Junín and Pasco highlands — among the harshest cultivable elevations anywhere, where extreme cold, wind and intense sun rule out most other food crops. Andean communities have grown and eaten it as a food staple for at least two thousand years.

Raw maca root is starch-heavy, which is part of why it's traditionally been cooked rather than eaten raw — boiled or steamed, much like a potato. Gelatinizing follows that same logic: heat and moisture are applied to the dried root, breaking down most of the starch before it's dried and milled again, reducing the digestive discomfort raw maca flour can cause and concentrating what's left.

Its flavor is distinctive and consistent across sources: malty, nutty, earthy, sometimes described as butterscotch-like — which is why it's most often stirred into smoothies, coffee, oatmeal, or baked into snacks, rather than eaten on its own.
